I apologize for the unexpected hiatus, but I haven’t been in the right mind to bake. My re-entry into the baking arena is going to be a two-fold mission: a dedication as well as my submission in this month’s Iron Cupcake: Earth (click here for my IC:E info post). copper-april-30-2000First and foremost, I want to dedicate this cupcake to my recently departed, forever beloved pooch Copper. My Copper (aka Copper-Top) was 8 years and 9 months old, and died of a brain tumor. People often ask how I came up with the name Copper for a black lab..well, when he was a wee pup he had a copper spot right on top of his head. Thus he became my copper-topped Copper. And since my dancing, flower-smelling bulldozer loved his treats, I hope this homage cupcake does him justice and that he would’ve enjoyed it if he were here (of course, with carob instead of chocolate).

Copper Top flowered cupcakesThis cupcake encompasses Copper’s favorite flavors (and I might add, everyone else who is in their right mind), chocolate and peanut butter. But here’s the twist…the frosting is no ordinary peanut butter frosting, as Copper was no ordinary labrador (afraid of water, couldn’t fetch one iota, and about 1/3 less in size – but he loved dancing, smelling flowers, and a good bum scratching). This is a gooey peanut butter fudgey flower atop the delicious chocolate/carob cupcake. For an optional dancing copper top (read: extra-sweet, ergo only before the dog-park variation)…enter caramel!

Ingredientscarob powder

Carob Cupcakes:
1 C hemp milk
1 tsp apple cider vinegar
1/2 C turbinado sugar
1/3 C canola oil
1.5 tsp vanilla extract
1 C oat flour
1/4 C hemp flour *optional
1/3 C carob powder (or use regular cocoa powder for humans)
3/4 tsp baking sodapeanut butter fudgey frosting
1/2 tsp baking powder
1/4 tsp salt

Copper Tops:
1/2 C creamy PB
1.5 C powdered/confectioner’s sugar
1 tsp vanilla
up to 6-8 TBSP hemp milk


1. Make the cupcakes: Preheat oven to 350°F and line 24 mini muffins, or 12 regular muffins, with paper liners.
2. Whisk together the hemp milk and vinegar in a large bowl, and set aside for a few minutes to curdle. Add the sugar, oil, and extracts to the hemp milk mixture and beat till foamy. In a separate bowl, sift together the flours Mocha with flour(including hemp flour, if using), carob (or cocoa) powder, baking soda, baking powder, and salt. Add in two batches to wet ingredients and beat till no large lumps remain (a few tiny lumps are okay). *Even Mocha helped, check her with flour on the face!
3. Fill muffin cups three-quarters of the way. Bake 18 minutes at 350°F, until a toothpick comes out clean. As always, send in a scout..if the scout falls, add more flour. Transfer to cooling rack and let cool completely.carob cupcakes
4. Make the Copper Tops: Mix all ingredients together (starting with about 4 TBSP milk, then using the remaining two as consistency adjustments) with a handheld mixer. Let chill 4 hours (for slathering on top) to overnight (for piping consistency). Pipe with a flower tip (any size), or slather on for a more haphazard appearance – which Copper would don from time to time.

Dogapalooza ’08

Two winters ago, Jo and I dubbed the Christmas Holiday as Dogapalooza ’06 because it was the first time we had all 3 pooches in one house together – for quite some time, it was about 1.5 weeks. It was awesome – as illustrated in our party of 5 picture. So when Jo stopped for a few days in Kansas City on her way to Alexandria, I think it’s totally appropriate that we consider this a mini-palooza for 2008. They were so good during Dogapalooza End-of-Summer Tour ’08…although the mailman didn’t seem to take too fondly to Kirsche’s barking. She can be a bit booming…but we still love her, I mean seriously, who wouldn’t? 🙂 And the pooches seem to love all the baking and cooking that was going on..bits falling on the floor, getting scraps of veg and whatnot..so here’s a bit of the Mini-Dogapalooza ’08 for everyone to enjoy.

And the pooches love helping their humans in the kitchen – they all have a specific specialty. Mocha is best at quality control during the initial stages, making sure only the best goes into our creations…

Copper likes to make sure no scraps get wasted in transport from chopping to stove…

And Kirsche is best in a general supervisory capacity!! She makes sure Small and Medium don’t slack on their jobs, and is there at a moments notice to fill in when either falls short of the duties required at each station.

Also, I’ve linked to a website that can help you locate pet-friendly lodgings on your travels!! I just booked Jo and Kirsche a room to stay in (through said website) on their drive across the country. This way, when Kirsche get’s sleepy she’ll have a place to stay!

Or when Princess Mocha wants to get a new collar, she’ll know where to do her shopping!

And Copper is always on the look out for new toys, what male isn’t??
