Let me take you down, ’cause I’m going to Strawberry Fields…full of Strawberry Ice Cream! Oh man, this ice cream is so creamy good!!! And so supremely easy!! You don’t even need to heat anything!! You can’t get much better than that….
2 C fresh strawberries, hulled and quartered
1 cup Coconut milk
1/2 C turbinado sugar
1/2 teaspoon vanilla extract
tiny pinch of salt
1. In a blender, combine the strawberries, hemp milk, Coconut milk, sugar, vanilla and salt. (The salt helps intensify the berry flavor.) Cover the blender with the lid and hold the lid down while you blend on high speed until the mixture is smooth.
2. Pour the berry mixture into the chilled canister of your ice cream maker. Freeze the berry mixture according to the manufacturers instructions. Mine took about 20 minutes to freeze…
3. Using a rubber spatula, scoop the ice cream into a freezerproof storage container with a lid and place it in the freezer to get firm (or ripen) for about 2 hours. (The ice cream can be eaten before this, but ripening it will give it a better texture and keep it from melting too quickly in your bowl.)
